Pepper, fruit
The pungent fruit of the pepper plant, also known as peppercorn. This term can be used to describe the fruit at different stages of maturity. The unripe berry can be boiled and dried to produce the spice known as "black pepper" or treated in a way that preserves the green colour (e.g. with sulfur dioxide, or vinegar) to produce the "green pepper". The ripe berry can be preserved in brine and vinegar ("red pepper") or soaked in water and turned into "white pepper" (which consists of pepper seeds only). To further specify the ripening stage, use the [variety](/schema/Product#variety) field.
