Coconut, young fruit
The immature fruit of the coconut tree, consisting of a green exocarp, a white mesocarp, and a hard lignified endocarp. After harvest, the green exocarp is usually removed and the white mesocarp is cut into a diamond shape. The endocarp, lined with a thin brown seed coat, is initially filled with a liquid endosperm (called "coconut water"). With time, cellular layers of endosperm deposit along the walls of the endocarp forming the edible endosperm known as "coconut meat", which is still thin and soft in the young fruit.
